Stir fried black fungus with ginger shreds

Ingredients:

  • 200g black fungus sliced
  • 200g ginger shreds
  • 2 tbsp white rice wine
  • 1 tsp light soy sauce
  • dash of pepper
  • 3 tbsp sesame oil
  • 1 tsp cornflour and 200ml water mix

Method:

  1. Fungus to be washed, remove stalk and sliced.
  2. Heat wok, add sesame oil, stir fry ginger shreds for 3 mins under low heat, add fungus and quick stir.
  3. Pour in cornflour and water mix, bring to boil, stir until slightly about to dry up.
  4. Pour in rice wine, soy sauce and pepper.
  5. Bring to boil then lower heat cook for 20 mins. Serve!

 

Steamed fish in yellow rice wine

Ingredients:

  • 1 Threadfin fish marinate with salt, pepper and cornflour.
  • 100g chopped ginger
  • 3 tbsp sesame oil
  • Sauce: 1 tbsp soy sauce, 100ml yellow rice wine and pinch of sugar.

Method:

  1. Heat sesame oil in pan, fry fish until golden brown on both sides. Drain fish from oil.
  2. Bring sauce to boil and pour over fish. Serve!

 

Stir fried mushrooms

Ingredients:

  • 10 fresh Chinese mushrooms diced
  • 100g old ginger sliced
  • 3 tbsp sesame oil
  • 100g abalone mushroom
  • pinch of sugar
  • 1 tbsp light soy sauce
  • 3 tbsp white rice wine
  • 1 tsp cornflour and 200ml water mix

Method:

  1. Heat sesame oil, fry ginger till crispy.
  2. Add in Chinese mushrooms and abalone mushrooms fry till cooked.
  3. Add in sugar, soy sauce, rice wine and quick stir.
  4. Pour in cornflour and water mix, simmer till gravy thickens. Serve!

 

Turmeric fried fish

Ingredients:

  • 2 or 3 pieces of grouper fish fillets or steaks
  • 3 tbsp sesame oil
  • Marination: Pinch of salt, white rice wine, dash of pepper, 10g fresh turmeric, 10g old ginger, 1 stalk lemongrass, 6 shallots all to grind in blender.

Method:

  1. Marinate fish for 30 mins.
  2. Heat sesame oil and fry til fish is cooked. Serve!

 

Stir fried fish with ginger

Ingredients:

  • 200g Threadfin fish fillets
  • 100g ginger slices
  • 1 big onion cut into wedges
  • 1 carrot sliced
  • 1 stalk spring onion sectioned
  • Marination: 1 tsp abalone sauce, 1 tsp light soy sauce, 1 tsp cornflour, dash of pepper, 1 tbsp ginger juice and 1 tbsp white rice wine.

Method:

  1. Marinate fish fillets for 10 mins. Quick fry in hot oil. Remove set aside.
  2. Fry ginger slices till crispy, add onions, carrots, spring onion. Quick stir fry, add fish fillets and toss.
  3. Serve!

 

Turmeric fried fish

Ingredients:

  • 2 or 3 pieces of grouper fish fillets or steaks
  • 3 tbsp sesame oil
  • Marination: Pinch of salt, 1 tbsp white rice wine, dash of pepper, 10g fresh turmeric, 10g old ginger, 1 stalk lemongrass, 6 shallots all to grind in blender.

Method:

  1. Marinate fish for 30 mins.
  2. Heat sesame oil and fry til fish is cooked. Serve!

 

Chinese spinach with anchovies

Ingredients :

  • Chinese spinach
  • 1 tbs sesame oil
  • ginger slices
  • 1 tbsp anchovies wash and dried
  • pinch of salt
  • pinch of sugar
  • dash of pepper

Method:

  1. Heat up the wok, add sesame oil. Saute ginger and anchovies. Fry until golden brown. Dish up and set aside.
  2. Stir fry Chinese spinach in same wok. Add salt, pepper and sugar.
  3. Toss in fried ginger and anchovies. Mix well. Serve!
